What comes to your mind when you hear the word 'Rajasthan'? Rajput royals. Colourful ghagra. Palaces. Forts. Mojdi. Handicrafts. Turbans. And the list goes on and on, right? One of the best things about Rajasthan, apart from the grand historical monuments and vibrant culture, is the mouth-watering food. If you are visiting Rajasthan and don’t try the wonderful delicacies that it has to offer then my friend, you are missing out on a lot. 1. Dal Baati Churma

The most famous dish of this royal state is hands down Dal Baati Churma. Whether it is Jaipur that you are visiting or Kumbhalgarh, you are sure to find it spiced up with the Rajasthani authenticity and touch. Baatis are hardened balls of wheat flour which are supposed to be eaten along with Dal made out of different lentils and spices. Add a dollop of ghee on the baati and mix it well with the hot dal (for some foodgasms). Churma is basically crushed baati mixed with sugar and jaggery. Churma, with its sweetness, complements the spicy Dal Baati.

Those with a non-vegetarian diet must try Laal Maas in Rajasthan. The literal translation of Laal Maas is ‘red meat’. It gets its name from the colour of the dish which is due to the red chillies used to prepare it. This savoury dish was traditionally prepared from the meat of wild boar, deer or jungle fowl but in the present time, it usually contains the meat of lamb. This marinated spicy mutton curry has ingredients like red chillies, garlic paste, sliced onions and curds. You can have Laal Maas along with chapati or rice. Rajasthani cuisine is incomplete without this dish of Rajasthan.

3. Pyaaz Kachori

Another special delicacy of Rajasthani cuisine is its Pyaaz Kachori. Served as a breakfast dish, Pyaaz Kachori has a spicy and tangy taste. The stuffing is a mixture of onions, spices and mashed potatoes. The mixture is added to the wheat flour dough and deep-fried. Coriander and mint leaves are added for the flavour and garnishing. You can enjoy Pyaaz Kachori best with a sweet and sour chutney made with dates and tamarind.

4. Ghewar

This crunchy sweet item is a bonne bouche, to say the least. It is shaped like a compact disc and is made out of wheat flour. It is then soaked in ghee, and milk and topped with sliced almonds and saffron. There are multiple flavours and varieties offered in Ghewar. If not all then at least try one while exploring Rajasthani cuisine. It is absolutely one of the best sweet dishes of Rajasthan. Get one for your family and friends (because why should only you get to taste heaven?

5. Ker Sangri

True to the land of Rajasthan to its core, Ker Sangri is a combination of Ker and Sangri. Basically Ker are a type of wild berries, found in the arid parts of Rajasthan, with a sour and tangy taste. Sangri is a type of long bean grown on the Khejri tree and mainly in the Thar Desert of Rajasthan. Together they are cooked with lots of different spices and the taste is uniquely enticing. You can have it along with bajra roti and buttermilk. One of the heartiest meals one can have in Rajasthan.

6. Gatte Ki Sabzi

You must surely be aware of the arid conditions and the Thar Desert of Rajasthan, right? Due to this, you will come across quite a lot of food dishes in Rajasthani cuisine that do not require fresh vegetables. Gatte ki sabzi is among those. Steamed gram flour (besan) balls cooked in tangy gravy made up of tomato, buttermilk and spices are what make Gatte ki sabzi. You can accompany this delicious dish of Rajasthan with chapati for a perfectly satisfying meal.
